Easy, light and great salad to make all year round keeping your family and guesting wanting more!

 

Directions

  1. On a heated plan place two tablespoons of canola oil and couscous
  2. Fry couscous until coated and translucent
  3. Mix a cup of boiling water into pan and cover for 5min
  4. Once 5min are complete stir pan so couscous does not get clumpy
  5. Take couscous off heat, cover and let rest of 3min
  6. In a large mixing bowl, add onion, red pepper, tomatoes, olive oil, vinegar and salt to taste
  7. Stir into bowl fried couscous and mix for 30seconds
  8. Place mixed couscous in a serving bowl
  9. Enjoy!

  • 1/2 Red onion
  • 1/2 Cup diced tomatoes
  • 1/2 Red pepper diced
  • 1 Cup couscous
  • 2 Tablespoons olive oil
